In Nha Trang, a coastal city more famous for its beaches than its back alleys, the true soul of the cuisine can still be found in these humble settings. Tucked away near the chaotic energy of Cho Dam markets, there is one such place that has captured my heart (and my stomach) for years. It's a family-run gem that defies the typical street food specialization, offering a comforting repertoire of dishes that has kept locals and in-the-know visitors returning for over a decade.

For more than ten years, a dedicated woman and her family have been tending to steaming pots and bamboo baskets at 02 Hai Ba Trung Street. What sets this establishment apart from the myriad of street food vendors in Nha Trang is its ambitious yet flawlessly executed menu. Most street food stalls are masters of one dish—perhaps the perfect bowl of Pho or a specific type of dumpling. Here, however, the family offers a small but mighty selection: Mi Hoanh Thanh (Wonton Noodle Soup), My Vi Tiem (Duck Noodle Soup), Banh Bao (Steamed Buns), and Pho. It's a testament to their skill and experience that each dish is prepared with the same level of care and authenticity.

One of the most compelling reasons to love this place, aside from the food itself, is its incredible hours. In a city that can sometimes feel like it winds down after the tourist crowds disperse, this spot is a beacon for night owls and hungry insomniacs. They are open all day, but their service stretches until the late, late hours. I have lost count of the number of times I have found myself there at 11 pm, seeking a warm and satisfying late dinner after a long day, only to find them still serving with the same energy and warmth as they would at midday. The glow of their stall becomes a familiar, welcoming sight in the quiet of the night.

My husband and I are frequent diners here, and we have our routines. No matter what main dish we order, the first stop is always the communal table of condiments. Among the standard offerings of chopsticks, spoons, and napkins sits a small, unassuming dish that holds a powerful secret: pickled garlic and chili, swimming together in a tangy, spicy brine. This is not for the faint of heart. One single piece of that garlic, lifted from the dish and dropped into your steaming soup, is enough to transform the entire bowl. It infuses the broth with a sharp, pungent kick that cuts through the richness of the meat and awakens every single taste bud. It's a burst of flavor that is both cleansing and invigorating.

My personal pilgrimage to this stall is almost always for one thing: Mi Hoanh Thanh. Pronounced charmingly by locals as "Me Won Ton," this is a noodle soup that embodies comfort. The bowl arrives with a tangle of thin, yellow egg noodles, perfectly cooked to retain a slight springiness. Nestled within are generous slices of tender, roasted pork and delicate wonton wrappers, each one hiding a savory morsel of minced, seasoned pork. The broth is light, yet deeply flavorful—the kind of clear, amber liquid that speaks to hours of gentle simmering.

But the magic of Mi Hoanh Thanh, like many Vietnamese dishes, lies in its customization. On the side, you are presented with a small plate bearing fresh shredded lettuce and mint leaves, along with the standard table condiments of lime, fresh chili, and soy sauce. A squeeze of lime brightens the broth, a dash of soy adds depth, and the fresh herbs provide a peppery, refreshing crunch that contrasts beautifully with the tender noodles and pork. For those who prefer a drier version, you can order Mi Kho (pronounced "Me Cor"). In this preparation, the noodles are served with the meat and a small, separate bowl of the flavorful broth on the side, allowing you to dip or pour as you please. At just 50,000 VND per dish, it is not only my favorite but also an incredible value for a meal so satisfying and interactive.

If I'm feeling particularly hungry or in need of something more robust, I turn to the Vit Tiem. As the name suggests (and you can pronounce it just as it's spelled), this is the duck counterpart to the pork noodle soup. It is a truly spectacular dish. Instead of sliced pork and wontons, you are presented with a magnificent Maryland cut of duck. This piece of meat has been simmered for hours until it achieves a state of perfect tenderness, falling away from the bone with the slightest provocation of your chopsticks. The broth it swims in is a complex masterpiece, flavored not just with the usual spices but also with dried apples (or sometimes Asian pear), which lends a subtle, almost imperceptible sweetness and a profound depth of flavor that you simply cannot replicate at home.

It is a very large meal, and fabulously tasty. As with the Mi Hoanh Thanh, you are encouraged to add your own touches of lime, chili, and herbs to tailor it to your liking. Priced at 90,000 VND, it feels like a decadent treat. I once snapped a picture of the large pot out front, where the stock bubbled away with whole duck legs immersed in the aromatic liquid. Beside it, another pot of their homemade chili sauce simmered, a deep, vibrant red, promising a different kind of heat.

Of course, they do a mean Pho here as well, using the wide, flat rice noodles (banh pho) rather than the thinner vermicelli-style noodles you find elsewhere. But if you are looking for the ultimate quick, cheap, and filling meal, you cannot go past their Banh Bao. For just 25,000 VND, you get a massive, fluffy steamed bun. The dough is like a soft, sweet cloud, and inside it cradles a treasure trove of fillings: seasoned pork mince, a whole quail egg, a slice of pork, and a piece of Chinese sausage. The combination of textures and savory flavors is astounding. I personally love to tear off a piece of the bun and dip it into a little dish of soy sauce, which perfectly complements the richness of the filling. It is incredibly filling; even on my hungriest days, I have never been able to eat more than one.
